Taste: The fruity taste already perceived in the bouquet is confirmed on the palate, accompanied by a delicate acidity. What is most convincing are the good structure and the aftertaste, mineral and at the same time rich in aromas.
Pairings In spring, an interesting pairing of this wine is with boiled white asparagus in Bolzanina sauce, or even with steamed green asparagus.
Otherwise, tuna carpaccio, smoked salmon or raw scampi. A typically South Tyrolean combination is with nettle dumplings, with steamed trout on mixed vegetables, or with unmatured goat's cheese.
