CHAMPAGNE J. SELOSSE BRUT SUBSTANCE GRAND CRU BLANC DE BLANCS

For fermentation, new 228 liter barriques are used, built with merrain oak wood from central France or the Vosges. The wood has undergone open air drying for at least 18 months before being subjected to light toasting (long and penetrating). The passage of the wine in these barrels lasts 12 months and periodic batonnage (storage) is carried out to encourage uniform maturation. In June of the following year we proceed with the assembly according to the "Solera" method, then with the bottling. Bottle aging lasts at least 6 years during which the bottles are moved four times. Since this particular wine first experienced a period in contact with the air during maturation in barriques and was then locked up in the bottle, it is advisable to "reopen" it, letting it breathe before being able to appreciate it to the fullest. It is therefore advisable to consume it at least 4 months after the disgorgement date (indicated on the back label) and to ventilate it adequately.
