Pouilly Fumé Aubaine 2021 - Jonathan Pabiot

Prodotto da un vigneto calcareo di un ettaro di circa 35 anni e maturato sui lieviti per 18 mesi in vasche di cemento interrate, un naso puro, intenso, denso e fresco, magnificamente iodato e croccante con frutta bianca matura.  Al palato, questo è un Pouilly intenso e strutturato, con una purezza stimolante ma anche enormemente ricco e strutturato, con una tensione e una salinità appetitose sul finale. Un vino complesso e potente con freschezza e tensione minerali. Potenziale di invecchiamento: da bere dal 2023 al 2040. Jonathan Didier Pabiot dal 2005 si è dedicato alla viticoltura. Questo ex campione di motocross ha rilevato in quel periodo i vigneti di famiglia, senza però seguire le consuetudini, ma anzi rimettendole in discussione. Ha applicato da subito i principi della viticoltura biologica e ha portato la tenuta ad affermarsi tra le migliori dell’area di Pouilly-sur-Loire.

St. Aubin è stata una delle denominazioni emergenti ed entusiasmanti della Côte de Beaune negli ultimi anni. Al palato è deciso, minerale e persistente. Denso, concentrato e complesso con aromi complessi di agrumi, pesche e spezie fini. Incredibilmente emozionante ed espressivo con un finale eternamente lungo, raffinato e fruttato. Viré-Clessé Quintaine 2022 Triple "A" - Domaine Guillemont

Il 2020 rientra indiscutibilmente nell'ormai classico profilo delle annate calde e secche. Nonostante tutto l'anno sia stato secco, si può veramente parlare di siccità solo nelle ultime tre settimane prima della vendemmia, che non sono bastate a far soffrire le nostre viti vecchie e ben radicate.  Troviamo un vino gourmet ma strutturato con un buon potenziale di invecchiamento grazie all'ispessimento delle bucce legato alla secchezza (fornendo fenoli strutturanti e precursori aromatici). Il Viré-Clessé Quintaine del Domaine Guillemot è un vino bianco di rara complessità ed eleganza del Maconnais, l’area della Borgogna che restituisce chardonnay più esuberanti e giovanili.  Un vino che nonostante la sua forza e potenza, gioca su finezze come i suoi tratti esotici e la sua mineralità sottile. Il Viré-Clessé Quintaine è un fuoriclasse, un vino che racchiude in sé tutta la grandeur francese, capace di giocare al palato con sapori e consistenze inaspettate.  Da provare con un brodo di cappone, fegatini di pollo e cardo ripassato in uovo e parmigiano.
