CHAMPAGNE BOLLINGER EXTRA BRUT RD 2007 - BOLLINGER

Produced from 70% Pinot Noir grapes, 30% Chardonnay. 14 crus, of which 91% Grands Crus and 9% Premiers Crus. An extremely long maturation time, more than four times longer than that established by the rules of the Denomination, in order to transform the aromas infinitely: a true alchemy of wine. The maturation takes place in a bottle with a cork stopper. A robe with intense golden reflections, a complex nose with aromas of honey and brioche. Spices then appear, revealed under multiple evocations (ginger, cumin, caraway) before evolving towards notes of mirabelle plum, dried apricot and fresh hazelnut. A lively and energetic attack, which reveals notes of white plum, walnut and anise as well as a beautiful freshness and incredible tension in the mouth. It pairs well with saffron-based dishes: scampi with saffron vinaigrette - Halibut fillet in saffron crust - Bresse chicken with saffron and ginger sauce. Wine Spectator96 / 100 The Maison Bollinger is located in Aÿ, one of the historic villages in the heart of Champagne. In 1992, with the Ethics and Quality Charter, all the methods and principles defended by the Maison were put into writing. The Bollinger vineyards satisfy 70% of the grape needs, extend over an area within the boundaries of the Grands Crus and Premiers Crus Champenois, and guarantee constant quality over time. The remaining 30% comes from grapes selected and purchased from other winemakers within the perimeter of the Grands and Premiers Crus. The Bollinger style is based on pinot noir, sourced from Aÿ, Bouzy and Verzenay. Its typicality gives the wines richness, vinosity and roundness.
