Calto Delle Volpare Bio Igt 2024 - Enrico Selmin

La storia dell’azienda ha origine nel 2003 quando il fondatore Franco Selmin decide di acquistare dei terreni sui Colli Euganei, solo un posto ha catturato la sua attenzione: Valle San Giorgio, loc. S.Biagio, piccola frazione del comune di Baone. Dal 2016 prende in mano l'azienda il figlio Enrico dopo essersi laureato in Enologia a Udine ed essersi specializzato in viticoltura Biologica, intraprende la libera professione come consulente nella gestione dei vigneti Bio, specialmente in Friuli. Nello stesso anno decide di lavorare la vigna direttamente con l’idea di produrre e vinificare lui stesso. Come primo vino decide per un Merlot, che fosse di semplice “beva”, adatto sia come aperitivo sia da pasto. Un vino non troppo corposo ed elaborato, sfruttando al massimo i lieviti autoctoni delle uve senza aggiunte di nessun tipo, tutto questo per esaltare al meglio il Terroir del nostro territorio. Il vino è infatti prodotto principalmente da uve Nerello Mascalese e una piccolissima aggiunta, circa del 3-4%, di Nerello Cappuccio. Tutte le uve provengono da vigneti sia giovani che vecchi che non superano i 60 quintali per ettaro. Uve di altissimo livello qualitativo.   Dopo la fermentazione-macerazione, il vino prosegue la sua vita in legno fino all’imbottigliamento, a circa un anno dalla vendemmia.
